This deliciously creamy cheese, pronounced boor-RAH-tah, is a specialty of the Apulia region of Italy on the southeast coast or the “heel of the boot.” Burrata, which means “buttery” in Italian, is recognized by many as one of the best fresh cheeses in the world. Made from mozzarella di bufala and panna cream, it is silky on the outside and creamy on the inside, boasting both a buttery & creamy flavor that is sure to please the palate. And it was this richness in flavor that inspired owner, Kim Tomlinson, to create Burrata Bistro.
With over 30 years experience in the food and beverage industry, Kim has “done it all” in the restaurant business from working the back to the front—from the kitchens to the front door. Completely self-taught, Kim has been making hand-made pastas since she was 12. Having perfected this, she has furthered her art by specializing in desserts and authentic dishes of Europe.
